Pumpkin Roll
3 Eggs, whip in mixer
1 C sugar, add to eggs gradually
Fold in:
2/3 C Pumpkin
1 tsp. Lemon Juice
3/4 C Flour
1 tsp. Baking Powder
2 tsp. Cinnamon
1 tsp. Ginger
1/2 tsp. Salt
1/2 tsp. Nutmeg
1 C Finely Chopped Nuts
Grease and flour jelly roll pan
Pour mixture onto pan
Sprinkle nuts onto batter
Bake for 15 minutes @ 350
Cover a dish towel with powdered sugar
Turn baked roll over onto towel; with the nut side against the powdered sugar
Let cool
While roll is cooling, make cream cheese frosting
Mix:
1 package Soft Cream Cheese
1 TBS Butter
1 tsp. Vanilla
3 C Powdered Sugar
Spread onto cooled roll, then carefully roll up the pumpkin roll
