Brushetta Chicken Bake
1 can (14-1/2 oz) diced tomatoes, undrained
1 package (6 oz) Stove Top stuffing mix for chicken
2 cloves garlic, minced
1-1/2 lbs. boneless skinless chicken breasts, cut into bite-size pieces
1 teaspoon dried basil leaves
1 cup shredded mozzarella cheese
1. Preheat oven to 400 degrees. Place tomatoes with their liquid in medium bowl. Add stuffing mix, 1/2 cup hot water and the garlic; stir until stuffing mix is moistened. Set aside.
2. Place chicken in 9 X 13 baking dish, sprinkle with the basil leaves and cheese. Top with the stuffing mixture.
3. Bake 30 minutes or until chicken is cooked through.
