My favorite Chicken Pot Pie
2 potatoes, diced
1 c. carrots, sliced into smallish bites
1/2 onion, diced
2-3 bay leaves
Cover the potates, carrots, and onions with water and chicken broth (or water with chicken bullion) and boil until tender. Remove bay leaves.
Add:
1 c. frozen corn
1 c. frozen peas
2 1/2 c. chopped cooked chicken
Make a roux by whisking together:
1/3 c. water
1/3 c. flour
Whisk the roux into the vegetable mixture. Bring to a boil and keep boiling until the mixture thickens. Add celery salt, salt, and pepper to taste. Pour filling mixture into pie shell. Cut a few "vents" into the top curst. Bake at 425 degrees until filling is bubbly and crust is browned.
