Mom's yellow rolls

1 package active dry yeast (2 1/2 t.)
1/4 c. warm water
1 c. milk, scaled (to scald the milk, heat in a small saucepan until little bubbles form around the edges. DO NOT boil)
1/4 c. sugar
1/4 c. shortening
1 t. salt
3 1/2 c. flour
1 egg

Preheat oven to 400 degrees. Soften yeast in warm water. Combine milk, sugar, shortening, and salt; cool to lukewarm. Add 1 1/2 c. flour; beat well. Beat in yeast and egg. (Add several drops of yellow food coloring to attain the distinctively yellow color of "moms" rolls). Gradually add remaining flour to form soft dough, beating well.

Place in greased bowl, turning once to grease surface. Cover and let rise until double (1-2 hours).
Shape into rolls (using mom's top secret method) and place on a greased baking sheet. Cover and let rise until double. Bake for 12 to 15 minutes.
