It's A Wrap
When my family vacations at Bear Lake we all take one meal and prepare for everyone. It is the BEST way to vacation. Instead of thinking of, planning for, and packing for meal after meal, we just bring enough to feed everyone for our one meal. It is especially great because everyone does an amazing job and we eat the BEST food when we are there. For my dinner this year I did wraps. We always eat SOOOOOOO much delicious food that we gain 5 pound in the 5 days we are there. I thought these wraps would be not only divine, but a little bit lighter than our usual fare. Most of these are not rocket science. In fact I can hardly call the recipe for the Caesar wrap a recipe at all, but here are a few great ideas for a quick, light, and delicious summer dinner.
Caesar Wrap:
cubed grilled chicken
lettuce
Parmesan cheese
croutons (if you want a little crunch factor)
Caesar salad dressing
Mix all ingredients in a large bowl and use as a filling for a tortilla.
Buffalo Wrap
cubed grilled chicken
lettuce
Ranch Dressing
Sticky Sauce*
Mix all ingredients in a large bowl and use as a filling for a tortilla. Use about 1/2 the amount of Ranch Dressing as you use Sticky Sauce. You want the buffalo flavor to win out.
Winger's Sticky Sauce:
Sticky Dressing:
2 ½ c. brown sugar
1/3 c. Franks Hot Sauce
3 T. corn syrup
½ c. apple cider vinegar
Combine all dressing ingredients in sauce pan. Stirring constantly on medium high heat, boil for one to one and a half minutes. If you cook longer than that, the sauce will turn hard like candy. This dressing can be used on salads, wings, chicken, etc. This dressing will stay good in your fridge for weeks, so double the recipe if you like leftovers.
BLT Wrap

diced tomatoes
bacon (cooked and crumbled)
BBQ Ranch dressing*
Mix all ingredients in a large bowl and use a filling for a tortilla.
BBQ Ranch Dressing:
½ c. ranch dressing
3-4 T. BBQ Sauce
2 T. onion, chopped
1 t. Lemon juice
¼ t. pepper
We did a quick survey after dinner and while all of the wraps received votes, the Buffalo wrap was the Bear Lake winner!
