Strawberry Jam Butter Cream Frosting

I just made this frosting in combination with the chocolate truffle cupcakes out of that wonderful cookbook we used for Mom's birthday. It was amazingly good! I used freezer jam that I had made, and just pureed it so it wouldn't be too chunky. This frosting was seriously amazing.

1 Cup unsalted butter, room temperature
5-6 Cups powdered sugar (I used less)
1/2 Cup strawberry Jam (smooth kind)
Red food coloring (if needed)

Cream butter and jam till well incorporated
Add powdered sugar 1 Cup at a time till desired consistency
MMMMM, enjoy!

I can't take any credit for this. This was ALL Patrice. She made it for us the night of the big "Candy Making Party", and it was a HUGE success. I've never thought that I liked feta cheese. It's probably because I have been scared to eat much of it. I'll even admit that as I watched Patrice put this dip together I was thinking to myself, "That is a lot of feta!" Here is another great recipe from one of my favorite recipe blogs. If you haven't checked out "Our Best Bites", you really should. They have lots of great recipes. Billie Jo just bought their cookbook and made an AMAZING birthday dinner for Tim. I can't wait until she posts the recipes.(hint hint) Okay, I guess because she is having a baby tomorrow I will give her a little time. Fresh Fruit Bruschetta

Ready for a trip back to Bear Lake? I am. But since I can't take another week off of work for vacation, I will just have to go there in my mind. These little babies will help. Patrice got an early start on breakfast one morning, just to make this for us. They were so good! I could've eaten them all day long.
